February 1995 Highlights Butter production was 120 million pounds in February, 1 percent above February 1994 but 9 percent below January 1995. American type cheese production totaled 240 million pounds, 9 percent above February 1994 but 8 percent below January 1995. Total cheese output (excluding cottage cheese) was 528 million pounds, 4 percent above February 1994 but 7 percent below January 1995. Creamed cottage cheese production was 29.7 million pounds, 8 percent below February 1994 and 2 percent below January 1995. Lowfat cottage cheese production was 25.7 million pounds, 4 percent above February 1994 but 4 percent below January 1995. Canned evaporated and condensed milk production, at 33.9 million pounds, was 18 percent below February 1994 but slightly above January 1995. Frozen desserts: (comparisons with February 1994) Ice cream (hard)---60.6 million gallons, up 1 percent. Ice cream (low fat)---21.1 million gallons, down 8 percent. Sherbet(hard)---3.68 million gallons, up 12 percent. Dry milk products: (comparisons with February 1994) Nonfat dry milk for human food--98.3 million pounds, up 15 percent. Dry whole milk---13.4 million pounds, up 59 percent. HDR2012000160010406951500Reliability Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,534 manufacturers that made one or more products in 1993. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are not subject to revision until the annual "Dairy Products" is published each May. An attempt is made to get information from all plants for preparing these estimates. Stocks data are subject to revision the month following the preliminary estimate. The next "Dairy Products" report will be released at 3 p.m. ET on May 5, 1995.
