January 1996 Highlights Butter production was 125 million pounds in January, 5 percent below January 199 but 13 percent above December 1995. American type cheese production totaled 275 million pounds, 5 percent above January 1995 but 1 percent below December 1995. Total cheese output (excluding cottage cheese) was 588 million pounds, up 4 percent from January 1995 but 4 percent below December 1995. Creamed cottage cheese production was 29.8 million pounds, 2 percent below January 1995 but 10 percent above December 1995. Lowfat cottage cheese production was 25.2 million pounds, 6 percent below Januar 1995 but 25 percent above December 1995. Canned evaporated and condensed milk production at 33.5 million pounds was 1 percent below January 1995 and 13 percent below December 1995. Frozen desserts: (comparisons with January 1995) Ice cream (hard) --- 54.1 million gallons, down 7 percent. Ice cream (lowfat) --- 20.2 million gallons, down 1 percent Sherbet (hard) --- 3.45 million gallons, up 10 percent. Dry milk products: (comparisons with January 1995) Nonfat dry milk for human food --- 98.9 million pounds, down 7 percent. Dry whole milk --- 14.3 million pounds, down 14 percent. Dry buttermilk --- 5.46 million pounds, down 13 percent. Da 2-6 (3-96) State totals are not published when fewer than 3 firms have reported or one firm comprises more than 60 percent of the State total. The map above outlines the regions used in the product tables. If we are not able to publish a region for confidentiality reasons, it will be combined with other regions when possible. For example, if North Atlantic can not be published, then it will be combined with South Atlantic to publish Atlantic. The West North Central and East North Central will be combined, if necessary, to form North Central. In the event that neither could be published, they will be combined with South Central to publish Central. Some tables will have only one or two regions shown, therefore the regions may not add to the United States total. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,531 manufacturers that made one or more products in 1994. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are subject to revision the month following the preliminary estimates. Annual revisions are also published in the "Dairy Products" report published each May. In preparing the annual report, an attempt is made to get information from all plants. The next "Dairy Products" report will be released at 3 p.m. ET on April 4, 1996.
