November 1996 Highlights Butter production was 94.3 million pounds in November, 4 percent above November 1995 but 1 percent below October 1996. American type cheese production totaled 261 million pounds, 3 percent above November 1995 but 2 percent below October 1996. Total cheese output (excluding cottage cheese) was 587 million pounds, slightly above November 1995 but 3 percent below October 1996. Italian cheese production declined in November. This was the first time during 1996 that production levels were below a year ago. Creamed cottage cheese production was 29.4 million pounds, 1 percent below November 1995 and 7 percent below October 1996. Lowfat cottage cheese production was 25.3 million pounds, 8 percent above November 1995 but 6 percent below October 1996. Frozen desserts: (comparisons with November 1995) Ice cream (hard) --- 49.6 million gallons, down 9 percent. Ice cream (lowfat) --- 21.0 million gallons, down 4 percent. Ice cream (nonfat) --- 2.07 million gallons, down 38 percent. Sherbet (hard) --- 2.82 million gallons, down 8 percent. Frozen Yogurt (total) --- 7.39 million gallons, down 21 percent. Dry milk products: (comparisons with November 1995) Nonfat dry milk for human food --- 73.8 million pounds, up 1 percent. Dry whole milk --- 6.69 million pounds, down 38 percent. Dry buttermilk --- 3.76 million pounds, down 4 percent. XXXX Note: Revised cream and neufchatel cheese estimates dating from January 1995 are published on page 10. The estimates have been revised downward due to a duplicate reporting problem discovered in 1996. Revisions to the 1995 data were made for comparability. State totals are not published when fewer than 3 firms have reported or one firm comprises more than 60 percent of the State total. The map above outlines the regions used in the product tables. If we are not able to publish a region for confidentiality reasons, it will be combined with other regions when possible. For example, if North Atlantic can not be published, then it will be combined with South Atlantic to publish Atlantic. The West North Central and East North Central will be combined, if necessary, to form North Central. In the event that neither could be published, they will be combined with South Central to publish Central. Some tables will have only one or two regions shown, therefore the regions may not add to the United States total. Average monthly prices reported by firms, weighted by shipments of each firm. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,495 manufacturers that made one or more products in 1995. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are subject to revision the month following the preliminary estimates. Annual revisions are also published in the "Dairy Products" report published each April. In preparing the annual report, an attempt is made to get information from all plants. The next "Dairy Products" report will be released at 3 P.M. ET on February 4, 1997.
