February 1997 Highlights Butter production was 106 million pounds in February, 10 percent below February 1996 and 15 percent below January 1997. American type cheese production totaled 270 million pounds, slightly below February 1996 and 3 percent below January 1997. Total cheese output (excluding cottage cheese) was 576 million pounds, slightly below from February 1996 and 3 percent below January 1997. Creamed cottage cheese production was 27.8 million pounds, 6 percent below February 1996 and 3 percent below January 1997. Lowfat cottage cheese production was 26.7 million pounds, 2 percent above February 1996 but slightly below January 1997. Frozen desserts: (comparisons with February 1996) Ice cream (hard) --- 63.3 million gallons, up 4 percent. Ice cream (lowfat) --- 23.4 million gallons, up 10 percent. Ice cream (nonfat) --- 2.81 million gallons, up 1 percent. Sherbet (hard) --- 3.61 million gallons, up 1 percent. Frozen Yogurt (total) --- 8.03 million gallons, down 14 percent. Dry milk products: (comparisons with February 1996) Nonfat dry milk for human food --- 91.3 million pounds, down 2 percent. Dry whole milk --- 10.0 million pounds, down 15 percent. Dry buttermilk --- 4.61 million pounds, down 18 percent. Since 1996 was a leap year, with 29 days in February, year-to-year percentage changes may be distorted. Production numbers and percentages were not adjusted to reflect the difference in the number of days. The adjustment would be 3.6% (29/28) = 1.036 to the 1997 estimates for making comparisons on a daily basis. State totals are not published when fewer than 3 firms have reported or one firm comprises more than 60 percent of the State total. The map above outlines the regions used in the product tables. If we are not able to publish a region for confidentiality reasons, it will be combined with other regions when possible. For example, if North Atlantic can not be published, then it will be combined with South Atlantic to publish Atlantic. The West North Central and East North Central will be combined, if necessary, to form North Central. In the event that neither could be published, they will be combined with South Central to publish Central. Some tables will have only one or two regions shown, therefore the regions may not add to the United States total. Average monthly prices reported by firms, weighted by shipments of each firm. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,495 manufacturers that made one or more products in 1995. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are subject to revision the month following the preliminary estimates. Annual revisions are also published in the "Dairy Products" report published each April. In preparing the annual report, an attempt is made to get information from all plants. The next "Dairy Products" report will be released at 3 P.M. ET on May 2, 1997.
