May 1997 Highlights American type cheese production totaled 299 million pounds, 1.1 percent below May 1996 but 7.0 percent above April 1997. Total cheese output (excluding cottage cheese) was 649 million pounds, 1.9 percent above May 1996 and 7.8 percent above April 1997. Cream cottage cheese production was 30.8 million pounds, 3.7 percent below May 1996 but 4.9 percent above April 1997. Lowfat cottage cheese production was 30.3 million pounds, 4.0 percent above May 1996 and 6.7 percent above April 1997. Butter production was 103 million pounds in May, 2.2 percent above May 1996 but 12.2 percent below April 1997. Frozen desserts: (comparisons with May 1996) Ice cream, Regular (hard) --- 77.7 million gallons, down 2.7 percent. Ice cream, Lowfat (total) --- 34.1 million gallons, down 6.5 percent. Ice cream, Nonfat (hard) --- 3.05 million gallons, down 12.7 percent. Sherbet (hard) --- 5.35 million gallons, up 8.8 percent. Frozen Yogurt (total) --- 8.53 million gallons, down 27.9 percent. Dry milk products: (comparisons with May 1996) Nonfat dry milk for human food --- 132 million pounds, up 15.6 percent. Dry whole milk --- 9.65 million pounds, down 13.1 percent. If we are not able to publish a region for confidentiality reasons, it will be combined with other regions when possible. For example, if North Atlantic can not be published, then it will be combined with South Atlantic to publish Atlantic. The West North Central and East North Central will be combined, if necessary, to form North Central. In the event that neither could be published, they will be combined with South Central to publish Central. Some tables will have only one or two regions shown, therefore the regions may not add to the United States total. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,420 manufacturers that made one or more products in 1996. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are subject to revision the monthfollowing the preliminary estimates. Annual revisions are also published in the Dairy Products report published each April. In preparing the annual report, an attempt is made to get information from all plants. The next Dairy Products report will be released at 3 p.m. ET on August 4, 1997.
