California accounted for 27 percent of the production, followed by Wisconsin with 23 percent and Washington with 9 percent. Cheese Output Up 3 Percent Total cheese production, excluding cottage cheeses, was 6.73 billion pounds, 3 percent above the 1993 production. Wisconsin was the leading State with 30 percent of the production. American type cheese production, at 2.98 billion pounds, was 1 percent above 1993 and accounted for 44 percent of total cheese in 1994. Italian varieties, with 2.62 billion pounds produced, were 5 percent above the 1993 production. Mozzarella accounted for 79 percent of the Italian production followed by Ricotta with 9 percent and Provolone with 7 percent. Wisconsin was the leading State in Italian cheese production with 31 percent of the production. Creamed cottage cheese,at 410 million pounds, was down 5 percent from 1993. Lowfat cottage cheese, at 321 million pounds, was up 1 percent. Frozen dairy products showed mixed changes in 1994. Ice cream production totaled 876 million gallons, up 1 percent from 1993. Ice milk, at 360 million gallons, was up 11 percent. Milk sherbet, at 54.8 million gallons, was up 8 percent. Frozen yogurt production, at 151 million gallons, was up 1 percent. The 285 million gallons of soft products (ice cream, ice milk, and sherbet) made during 1994 accounted for 22 percent of the total frozen dairy products, excluding yogurt. Soft frozen dairy products are sold from direct-serve soft freezer and milk shake machines. Nonfat dry milk for human food production, at 1.22 billion pounds, was up 27 percent from 1993. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,531 manufacturers that made one or more products in 1994. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are not subject to revision until the annual "Dairy Products" is published each May. An attempt is made to get information from all plants for preparing these estimates. Stocks data are subject to revision the month following the preliminary estimate.
