This data was first published in the October 2, 1996 * * Dairy Products. * **************************************************************************** Butter Production Down 3 Percent in 1995 Production of butter in the United States during 1995 totaled 1.26 billion pounds, 3 percent less than 1994. California accounted for 27 percent of the production, followed by Wisconsin with 22 percent and Washington with 8 percent. Cheese Output Up 3 Percent Total cheese production, excluding cottage cheeses, was 6.94 billion pounds, 3 percent above the 1994 production. Wisconsin was the leading State with 30 percent of the production. American type cheese production, at 3.13 billion pounds, was 5 percent above 1994 and accounted for 45 percent of total cheese in 1995. Italian varieties, with 2.64 billion pounds produced, were 1 percent above the 1994 production. Mozzarella accounted for 79 percent of the Italian production followed by Ricotta with 9 percent and Provolone with 7 percent. Wisconsin was the leading State in Italian cheese production with 32 percent of the production. Creamed cottage cheese, at 380 million pounds, was down 7 percent from 1994. Lowfat cottage cheese, at 318 million pounds, was down 1 percent. Frozen dairy products showed mixed changes in 1995. Ice cream production totaled 857 million gallons, down 2 percent from 1994. Ice cream, lowfat, at 350 million gallons, was down 2 percent. Milk sherbet, at 53.5 million gallons, was down 1 percent. Frozen yogurt production, at 152 million gallons, was up 1 percent. Nonfat dry milk for human food production, at 1.23 billion pounds, was up slightly from 1994. Dry buttermilk production, at 54.8 million pounds, was up 5 percent. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,495 manufacturers that made one or more products in 1995. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly production estimates are subject to revision the month following the preliminary estimates. Annual revisions are also published in the "Dairy Products" report published each April. An attempt is made to get information from all plants for preparing these estimates.
