United States Department of Agriculture National Agricultural Statistics Service Da 2-1 (00) Dairy Products 1999 Summary April 2000 1999 Highlights Total cheese production, excluding cottage cheeses, was 7.94 billion pounds, 6.0 percent above 1998 production. Wisconsin was the leading State with 27.1 percent of the production. American type cheese production was 3.58 billion pounds, 7.9 percent above 1998 and accounted for 45.0 percent of total cheese in 1999. Italian varieties, with 3.14 billion pounds were 4.6 percent above 1998 production. Mozzarella accounted for 80.2 percent of the Italian production followed by Ricotta with 8.0 percent and Provolone with 7.1 percent. Wisconsin was the leading State in Italian cheese production with 27.5 percent of the production. Butter production in the United States during 1999 totaled 1.28 billion pounds, 9.2 percent above 1998. California accounted for 26.9 percent of the production, followed by Wisconsin with 22.8 percent and Washington with 9.3 percent. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,258 manufacturers that made one or more products in 1999. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly estimates are subject to revision the month following the preliminary estimates. Annual estimates are published in the "Dairy Products" report published each April which includes any revisions made to current and previous year. An attempt is made to get information from all plants for preparing these estimates.
