Page 13, October 2000 Lactose, Human and Animal Stocks, has been revised to 37,582 (1,000 Pounds). ******************************************************************************* 2000 Highlights Total cheese production, excluding cottage cheeses, was 8.25 billion pounds, 3.9 percent above 1999 production. Wisconsin was the leading State with 26.6 percent of the production. American type cheese production was 3.63 billion pounds, 1.8 percent above 1999 and accounted for 44.0 percent of total cheese in 2000. Italian varieties, with 3.31 billion pounds were 5.1 percent above 1999 production. Mozzarella accounted for 79.5 percent of the Italian production followed by Provolone with 7.5 percent and Ricotta with 7.3 percent. Wisconsin was the leading State in Italian cheese production with 27.6 percent of the production. Butter production in the United States during 2000 totaled 1.27 billion pounds, 0.3 percent below 1999. California accounted for 27.8 percent of the production, followed by Wisconsin with 22.6 percent. Cottage cheese: (2000 U.S. production, comparisons with 1999) Creamed --- 372 million pounds, up 3.2 percent. Lowfat --- 364 million pounds, up 1.4 percent. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,124 manufacturers that made one or more products in 2000. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly estimates are subject to revision the month following the preliminary estimates. Annual estimates are published in the "Dairy Products" report published each April which includes any revisions made to current and previous year. An attempt is made to get information from all plants for preparing these estimates.
