Wisconsin was the leading State with 25.4 percent of the production. Italian varieties, with 4.16 billion pounds were 1 percent below 2007 production and accounted for 41.9 percent of total cheese in 2008. Mozzarella accounted for 77.9 percent of the Italian production followed by Provolone with 8.0 percent and Ricotta with 6.2 percent. California was the leading State in Italian cheese production with 29.4 percent of the production. American type cheese production was 4.07 billion pounds, 5.0 percent above 2007 and accounted for 41.0 percent of total cheese in 2008. Wisconsin was the leading State in American type cheese production with 20.2 percent of the production. Butter production in the United States during 2008 totaled 1.64 billion pounds, 7.3 percent above 2007. California accounted for 33.8 percent of the production, followed by Wisconsin with 22.0 percent. Includes plant and shipping losses. Procedures and Reliability: Estimates included in this report are based on data provided each month by manufacturers of these products. In 32 States, the State Departments of Agriculture assist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of each month. There were 1,116 manufacturers that made one or more products in 2008. Each month, reports are generally received from all dairy plants in States with small numbers of plants. In States with large numbers of plants, survey procedures are designed to obtain monthly reports from all large plants and from a sample of small plants. Monthly estimates are based upon returns from about 70 percent of the plants which account for 70 to 90 percent of the total production of major dairy products. Revision Policy: Monthly estimates are subject to revision the month following the preliminary estimates. Annual estimates are published in the "Dairy Products" report which includes any revisions made to current and previous year.
